Recipe of the Week Savory Breakfast Casserole

This is my favorite breakfast and even lunch! It’s seriously so good and I share it with everyone who asks me for recipes! This is not my original recipe it’s from the fabulous Paleo OMG and her original link is below if you want to see her notes on the recipe.

-Macros following the recipe as is P:23.7 C:12.8 Fat: 26.8 (using Jimmy dean sage breakfast sausage)

-Macros with 5 eggs, 1&⅕ cup egg whites, and Turkey Sausage P: 22.3 C: 10.8 F: 17.1 (I don’t get very many fats so I just do all egg whites and the leanest sausage I can find). 

Ingredients

 

8-10 eggs, whisked *You can also use 5 eggs and 1&⅕ cups egg whites for lower fat

1lb breakfast sausage or chorizo, cooked and broken into pieces *Use chicken or turkey sausage to keep your fats down.

1 sweet potato, shredded

½ yellow onion, diced

2 tablespoons hot sauce (I used Siracha)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon pepper

 

Instructions

 

Preheat your oven to 375 degrees.

 

First you’ll want to get your sausage (or other choice of meat) cooking. So add your sausage to a hot skillet and let cook through.

While the meat is cooking, dice up your onion and shred your sweet potato. I shredded mine by throwing it in a food processor, using the shredding attachment. If you don’t have a food processor, you can shred the sweet potato by hand using a cheese grater and dice the onion with a knife.

Now, beat those eggs of yours in a large bowl.

 

Add the cooked meat, onion, and sweet potato to the bowl with the whisked eggs. Then add the rest of your ingredients and mix all together.

Grease a 8×8 or 9×9 glass dish and add your egg mixture to it.

 

Cook for 25-30 minutes until the eggs aren’t runny. The middle takes a bit longer so just be patient.

 

Now you will be able to slice up the casserole and have a piece most mornings this week. If you work in an office, a good trick is to take the entire casserole to work and leave it in the fridge, and that way it’s already there for you and ready when you get to work each morning!
